These are a FAVORITE in our house. I made them a while ago but then they kind of got lost in my recipe shuffle. The kids and hubby were glad I added them back! I wrote the recipe for the Instant Pot but any way you like to make BBQ chicken will work – its really the onions and sauce that make these sandwiches to die for every time!

Smothered Chipotle BBQ Chicken Sliders



1 lb chicken
BBQ Sauce (used about 1-1/2 cups)
3/4 cup water
Mini buns

White Sauce:

1 cup mayo
1/4 cup apple cider vinegar
1 T lemon juice
*salt and pepper optional

Pickled Red Onions:

1 red onion, diced
1/2 cup red wine vinegar (if you like vinegar, use up to 3/4 c)
2 T sugar


  1. Add chicken, bbq sauce and water to Instant Pot. (You can cook the chicken in the crock pot too! Just add bbq sauce and chicken and cook on low for 4-6 hours).
  2. Cook on “poultry setting” for 15 min. When done, quick release the pressure. Shred the chicken and return to Instant Pot.
  3. While chicken is cooking, make onions – mix together all ingredients (onion, red wine vinegar, and sugar) and put in fridge to marinate. These are better the longer you marinate so if you remember, make them the night before or the morning of the meal!
  4. Mix together all ingredients for the white sauce (apple cider vinegar, mayo, and lemon juice). Also store in fridge while chicken is cooking.
  5. Serve chicken on buns, top with white sauce and onions! Can add extra BBQ sauce if you desire.
  6. This makes GREAT leftovers!
