Simple Shepherd’s Pie
Simple Shepherd’s Pie is another favorite of our family. After we had Rhory, one of JD’s coworkers brought this to us. We both had never eaten it before but her recipe made us fall in love! Now it is almost a monthly staple in our house.
1 lb ground beef
1 can cream of mushroom
1 cup frozen peas and carrots
2 T ketchup
6 servings of mashed potatoes (we used boxed)
- Preheat oven to 400 F
- Brown meat in saucepan. While meat is browning, make potatoes.
- After meat is browned, drain and add veggies, cream of mushroom soup and ketchup. Stir to combine.
- Spoon meat mixture in to corning ware dish and top with potatoes – spread so they cover all of the meat.
- Cook in oven for 15- 20 minutes. We sprinkle garlic salt on ours and it is delicious!
