[30 Minute Meal] Shrimp Pad Thai

Guess what? This is NOT an Instant Pot meal! I have tried to really venture out on our meal plan to introduce the kids to some new flavors and experiences. We made a version of this once at Kroger Chef Junior and Rhory actually seemed to like it. There are some specific steps BUT if you follow them you are guaranteed to have a delicious meal.

Shrimp Pad Thai


6-8 oz linguine-style noodles
1/3 cup lemon juice
1/3 cup water
4 T LOW SODIUM soy sauce
3 T packed brown sugar
1 T rice vinegar
1/2 t cayenne pepper
3 T vegetable oil, divided
3 cloves minced garlic
1 onion, minced
3 eggs, beaten
12 deviened peeled shrimp, cooked
1/4 c dry roasted peanuts, finely chopped


  1. Cook linguine pasta according to directions on box. Drain and rinse with cold water.
  2. While pasta is cooking do steps 3-5:
  3. Salt and pepper shrimp and cook in small pan until thoroughly cooked.
  4. Chop the peanuts. I put them in a bag and beat them with a roller! LOL
  5. In small bowl, mix together lemon juice, soy sauce, water, brown sugar, rice vinegar, cayenne pepper, and 1 T vegetable oil. Stir until thoroughly mixed.
  6. In a 12 inch skillet, heat the remaining 2 T of vegetable oil. Add garlic and onion and cook for 1-2 minutes. Add the eggs and stir constantly until scrambled.
  7. Add the lemon juice mixture, noodles, shrimp, and peanuts. Use two spatulas to stir and mix until the sauce starts to thicken. Remove from heat and it is done!
