Quick & Simple Taco Soup
Instant Pot Style
Fall weather is *almost* upon us! This is my favorite season of the year. I love everything about it – but most of all the soups! The possibilities are endless and so delicious. Soups are budget friendly and last for a few days! I stumble upon a recipe and tweaked it to fit our family tastes and we ate on it for days. I hope you enjoy it.
1-1/2 lb ground beef, browned and drained
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1 can petite diced tomatoes
1 can corn, drained
1 small can enchilada sauce – we use red!
1/4 cup taco seasoning
1/2 t cumin
1/2 t garlic powder
1/2 t chili powder
1 can beef broth or 3/4 cup water
Optionial: sour cream, shredded cheese, tortilla chips
1. Add all ingredients to Instant Pot. Stir to combine.
2. Set Instant Pot to the Soup setting for 10 minutes.
3. Quick release.
4. Serve in individual bowls and top with sour cream, shredded cheese.
5. Eat with a spoon or on tortilla chips!
