One Pan Mexican Pasta
I am tired as crap from starting school so quick meals are literally the ONLY option. I actually took an hour and a half nap tonight while my husband graciously fed AND bathed the children. Being a pregnant, working mom is no joke and it can take its toll on my ability to really function once I get home. I will be sharing quick recipes that you can use in your house to make dinner a breeze!
One Pot Mexican Pasta
1 lb beef
1 onion, diced
1 t cumin OR taco seasoning
1/2 can corn (I put the remainder in the fridge)
1/2 can black beans (I put the remainder in the fridge)
1 can rotel tomatoes NOT DRAINED
8 oz tomato sauce (I only had tomato paste and mixed with water)
1-1/4 cup water
8 oz uncooked pasta, your choice!
- In a large skillet, saute onion and brown meat. Drain.
- Add cumin, corn, beans, tomatoes undrained, tomato sauce, water, pasta. Heat to boiling.
- Once boiling, cover, reduce heat and cook for 15 minutes.
- Stir halfway through.
- Once finished, put in individual bowls and top with cheese!
