One Pot Mexican Pasta

I am tired as crap from starting school so quick meals are literally the ONLY option. I actually took an hour and a half nap tonight while my husband graciously fed AND bathed the children. Being a pregnant, working mom is no joke and it can take its toll on my ability to really function once I get home. I will be sharing quick recipes that you can use in your house to make dinner a breeze!

One Pot Mexican Pasta

Ingredients:

1 lb beef
1 onion, diced
1 t cumin OR taco seasoning
1/2 can corn (I put the remainder in the fridge)
1/2 can black beans (I put the remainder in the fridge)
1 can rotel tomatoes NOT DRAINED
8 oz tomato sauce (I only had tomato paste and mixed with water)
1-1/4 cup water
8 oz uncooked pasta, your choice!
Shredded cheese

Directions:

  1. In a large skillet, saute onion and brown meat. Drain.
  2. Add cumin, corn, beans, tomatoes undrained, tomato sauce, water, pasta. Heat to boiling.
  3. Once boiling, cover, reduce heat and cook for 15 minutes.
  4. Stir halfway through.
  5. Once finished, put in individual bowls and top with cheese!
