Instant Pot Mongolian Chicken

Life with three under four has proven to be no joke. I will say the adjustment to three versus the adjustment to two has been slightly easier. Rhett was a pretty rough baby, he wanted to be held 24/7 and had colic pretty bad. Rhory was young and didn’t understand this new baby needing all of mommy’s attention. Now that Ty is here, Rhory and Rhett have each other to play with during the times I am with the baby. Ty is also much less demanding then RhettĀ  hence why I have time to share these awesome recipes!

Instant Pot Mongolian Chicken

Ingredients

2 frozen chicken breasts
3/4 cup brown sugar
1 T minced garlic
1/2 cup soy sauce
3/4 cup water
1 cup baby carrots
1/2 head of broccoli, chopped
1/8 cup cornstarch

Directions

  1. In a small bowl, mix together brown sugar, garlic, soy sauce, and water.
  2. Add frozen chicken breasts to Instant Pot, make sure they are not touching or overlapping too much.
  3. Pour mixture over the chicken. Add in carrots and broccoli.
  4. Close lid, choose poultry (or manual or pressure cook -depending on your model) and set timer to 12 minutes.
  5. Naturally release pressure for 10 minutes and then manually release the rest.
  6. Remove chicken from Instant Pot to shred.
  7. Scoop out 1/8 cup of liquid and mix it in small bowl with 1/8 cup of cornstarch. Add the mixture back in to the pot and stir to combine.
  8. Add shredded chicken back in to the pot and serve!
  9. (SIDE NOTE: Our broccoli was a tad mushy, so an alternative would be to saute it in a pan while the chicken cooks and then add it in when you release the pressure.)
  10. Enjoy!
