Instant Pot Chicken Tortilla Soup
Instant Pot Chicken Tortilla Soup is another family favorite! You can serve it with a spoon or with chips! My favorite part of this recipe is that it can be completely done in about 20 minutes in the Instant Pot. My chicken was COMPLETELY frozen when I started… I am constantly amazed by this machine.
1 lb frozen chicken
1/4 cup taco seasoning (store bought or homemade)
3 corn tortillas (cut in to 1 inch squares)
1 onion, diced
1 can diced tomatoes
2 cans chicken broth
1 can corn (or hominy)
1 can black beans
1 T minced garlic
2 T olive oil
- Press Saute on Instant Pot and add olive oil, onions and garlic. Saute until onions are translucent.
- Turn off Instant Pot and then press Soup and set timer to 10 minutes.
- Add ALL remaining ingredients and seal lid.
- Manually release pressure when time goes off, take chicken out and shred then return to pot.
Chicken Shredding Tip – Put chicken in bowl and use a hand mixer to shred! IT IS A LIFE CHANGER!
