Instant Pot Cheeseburger Soup

Fall is in full force, with some days feeling like winter! Soup is one of my go to recipes when the weather outside is less than desirable. I love smelling up the house with a delicious soup and having a good amount of leftovers! Overall I give this recipe a 5 out of 5 for ease and deliciousness! It was ready in under 30 minutes! I pretty much also live for anything made in the Instant Pot!

Instant Pot Cheeseburger Soup


1 lb ground beef
1 onion, diced
2 t minced garlic
2 large russet potatoes, peeled and diced
1-2 celery stalks, chopped
1 cup baby carrots, chopped thinly
3 cups chicken broth
1 t salt
1/2 t pepper
2 cups cheddar cheese
1 can evaporated milk
3 T water + 3 T cornstarch


  1. Brown ground beef, onions, and minced garlic on saute setting in Instant Pot.
  2. Drain grease and add potatoes, celery, carrots, chicken broth, salt and pepper.
  3. Seal lid and set to Soup timer for 5 minutes (will take some time to build pressure).
  4. Quick release the pressure and stir the the evaporated milk.
  5. Mix together the water and cornstarch, add to the soup and stir to thicken.
  6. Add in cheese and continue stirring. If cheese is not quite melting fast enough, turn on the Saute setting and continue stirring – just set back to “Keep Warm” when you are done!

    AC, how do you easily remove the pot to drain grease? It’s hot! That’s the only unwieldy thing about the IP that I’ve found, otherwise I love it!
