Instant Pot Bow Tie Beef Pasta

Have you figured out yet that I love quick meals? The Instant Pot is my *go-to* when I need a quick fix meal. Working all day can be draining, so I always look for ways to lighten my load. This kitchen gadget has been a HUGE help! Check out some of my other 30 minute meals here, here AND here!

2 cups UNCOOKED bow tie pasta
1-1/2 cups beef broth
1 lb cooked ground beef
1 green pepper, cut in to small chunks
1 onion, diced
1 squash (or zuchinni), cut in to small chunks
1 can diced tomatoes
2 cups cheddar cheese
salt & pepper

  1. Add beef broth, uncooked noodles and beef to Instant Pot, stir to mix.
  2. Add green pepper, can of diced tomatoes, onions and squash. Add a dash of salt and pepper.
  3. Cook on manual for 10 minutes. Manually release pressure.
  4. Remove lid, add cheese and stir until melted. You can also scoop out individual bowls and mix in the cheese that way!
  5. Easy, easy, easy!

What veggies would you add? I love that this is so versatile and allows for a variety of flavors to mix together. I may add more green pepper next time because green pepper is my FAVORITE! My stuffed peppers will be making a lot of appearances next month on our April Meal Plan. YUM!
