Instant Pot Balsamic Beef Roast

 

Whew, it has been a while since I have had the time or energy to try out some new recipes for the Instant Pot. Oddly enough, with a brand new baby at home I am ready to get rolling again! I have searched high and low for some roast recipes that were different than the norm and have not quite found one to my liking… until today! We made this for dinner and both kids and my husband devoured it. The ingredient list is short, as are the directions. Throw everything together for a super simple meal that cooks relatively quickly.

Instant Pot Balsamic Beef Roast

Ingredients

  • 1 (2½ – 3 pound) boneless roast beef (chuck roast)
  • Vegetable oil
  • 1 onion, chopped
  • 2 t garlic, minced
  • 3/4 cup beef broth
  • ½ cup balsamic vinegar
  • 2 T Worcestershire sauce
  • 2 T soy sauce
  • 2 T honey

Directions

  1. Turn Instant Pot on to Saute setting. Add olive oil to cover the bottom of the pot. Sear all sides of the roast and remove from the Instant Pot. I sometimes cut mine in half to make it slightly easier to get all sides.
  2. Add another dash of olive oil, onions and garlic and saute for a few minutes until onions are tender.
  3. Turn off Instant Pot. Mix together beef broth, balsamic vinegar, Worcestershire sauce, soy sauce and honey.
  4. Add roast back to Instant Pot with onions and garlic.
  5. Pour in mixture of all other ingredients.
  6. Using the PRESSURE COOK setting or MANUAL setting, cook on HIGH for 35 minutes. Ensure the lid is closed and the vent is closed.
  7. Once the time is up, naturally release pressure for 10-15 minutes and then manually release the rest of the pressure.
  8. Shred with forks and serve with potatoes and another vegetable of your choice!
