Honey Teriyaki Chicken With Four Cheese Potatoes

Do you ever have those nights where you thought you had all the ingredients for dinner and then – SURPRISE! You end up missing the ONE thing that kind of makes or breaks the whole recipe. This was me the other night. I was so excited to meet our goal of not eating out ALL week and make a lovely Chicken Marsala recipe – minus the fact I did not have the key marsala wine ingredient. BOO! Looking back I am kind of thankful because it led me to this DELICIOUS recipe. Recipes that are ready in a flash and in one pot (or two) really make life with kids so much simpler. Plus, writing four cheese potatoes makes it seem so fancy – we just used instant potatoes. NAILED IT!

Honey Teriyaki Chicken With Four Cheese Potatoes

Ingredients

2 boneless skinless chicken breast , cut in half
1/4 cup honey
1/4 cup rice vinegar
1/2 t ginger powder
1 T minced garlic
1/4 t pepper
2 T low sodium soy sauce
1 T olive oil
1/2 T corn starch
1 T water
1 package Idahoan Four Cheese Instant Potatoes

Directions

  1. Mix together honey, rice vinegar, ginger powder, minced garlic, pepper, soy sauce, and olive oil in separate bowl.
  2. Cut chicken breast in HALF and pour mixed sauce over them in Instant Pot. There is enough liquid that you should not have to add more. (Side note: I tried to use frozen chicken breast and could not cut it in half. It really messed with my sauce and cooking times so I really advise NOT using frozen chicken if you can avoid it. Still possible if frozen chicken is all you have, though.)
  3. Seal lid, choose poultry setting and set timer for 10 minutes.
  4. When timer gets down to about 5 minutes, start making instant potatoes and set aside.
  5. Once the chicken is done remove from Instant Pot and put in another bowl. Then, shred with forks OR your hand mixer, like us.
  6. Mix together the cornstarch and water and add to sauce in Instant Pot. Change setting to “Saute” and stir in the cornstarch mixture until sauce starts to thicken. Add chicken back to sauce, turn off Instant Pot. (I removed my inner bowl since the bottom is still SO hot and continued to cook my sauce).
  7. Serve chicken over mashed potatoes!

If you don’t have a bag of instant potatoes, use whatever you have. The chicken flavor kind of packs a punch so even plain potatoes would be delicious with this meal.
