Finding meals to use any “extra” meat for is a win in my book! I bought a bag of meatballs from Aldi the other day for an incredible deal and we actually only used half for a recipe. I contemplated making something we had already had before but we are really in the swing of trying some new recipes. And the Baked Meatball Sub Casserole came to life. This recipe was so good even our dog jumped up on the counter and ate what was left – insert HUGE *eyeroll* here. You know those recipes you are actually excited to eat for leftovers or even a second serving? Yeah… this was one of them… except my stinking dog ate it first!

Baked Meatball Sub Casserole

Ingredients

1 can non-flaky refrigerated biscuits
1 small bag frozen meatballs
2 cups marinara sauce
2 cups shredded mozzarella

Directions

  1. Preheat oven to 375.
  2. Grease 9X13 pan.
  3. Cut biscuits in to fourths.
  4. Spread cut up biscuits on the bottom of the pan.
  5. Bake in oven for 5 minutes.
  6. Take dish out of oven and cover biscuits with marinara sauce.
  7. Spread meatballs over the biscuits and marinara sauce (push the meatballs down some).
  8. Top with the mozzarella cheese, using less or more to your preference!
  9. Bake at 375 for 30 minutes until biscuits are cooked and cheese is melted.
  10. DONE! Enjoy.
