Recently I have tried to cut back on the amount of Oreos I consume daily – which is quite a lot! We have also tried to add some healthier meals to our list of recipes and I am happy to say that Stove Top Turkey & Peppers is a new favorite! J was concerned when I ordered a bunch of ground turkey through our last Kroger Clicklist order because he “doesn’t like ground turkey”… *insert eye roll*. The ground turkey was on sale for $1.99 a pound and that is a price that cannot be beat!

After working all day I need meals that can be whipped up quickly, or put in my Instant Pot and cook on its own! This meal was complete in under 20 minutes from start to finish – including cutting the veggies. The kids even enjoyed the meal. We served with mashed potatoes – yes the box kind – and green beans. Ideally I would make these with a red or yellow pepper, but green was all I had on hand.

Stove Top Turkey & Peppers

Ingredients

Olive oil
1 t minced garlic
1 green pepper, diced
1 onion, diced
1 lb ground turkey
2 t onion powder
3-4 t chili powder

Directions

  1. Heat skillet with a dash or two of olive oil – I never measure.
  2. Add in minced garlic, onion, and pepper and saute for about 3-4 minutes until onion become translucent.
  3. Move veggies to one side of the pan and put ground turkey in the other side of the pan.
  4. Cook ground turkey until browned and mix veggies in.
  5. Stir in onion powder and chili powder. Add more to taste.
  6. Enjoy!
