Instant Pot Broccoli Cheddar Soup
Instant Pot recipes are my favorite! They are super quick and easy, especially soup recipes! No more waiting for the soup on the stove. This Instant Pot Broccoli Cheddar Soup will surely be a hit in your house. Have you had the Panera version of this? The recipe I am about to share is *wildly* similar! I also made my own bread bowls… LOL! I literally shoved two slices of bread down in a muffin tin and baked at 350 for 10 minutes until a little crispy. The bowls were small so we didn’t only eat out of them – we put them in another bowl and filled the soup all around.
1 cup diced carrots (I cut up baby carrots!)
1/2 cup water
16 oz package of broccoli
2-1/2 cups milk
2 chicken bouillon cubs
1/2 t salt
1/4 t pepper
1 cup shredded cheddar cheese (plus more if you want to top your soup with cheese!)
- Add all ingredients EXCEPT the cheese to the Instant Pot.
- Seal the lid and set to “Soup” and timer for 12 minutes.
- Manually release the pressure. NOTE: Broccoli florets will SPEW everywhere. I recommend holding a towel above the valve to try and catch some, or your cabinets will get a bath. Be careful though because the towel will get damp and the steam is HOT. Hold with a pot holder!
- Add cheese and stir to combine. SERVE AND ENJOY!!
