15 Minute Breakfast Muffins
These are probably the best muffins EVER and so simple! I make two or three batches at a time to freeze for later. Just wrap them individually and WALA – grab and go breakfast!


4 slices of bread (toasted)
8 eggs
1 cup milk
2 t ground mustard
1 t salt
1 t Pepper
1 cup cheddar cheese
1/2 cup bacon bits
Any additional add-ins; bell pepper, sausage, ham, onions, etc


1. Toast bread and then cut in to small pieces. Evenly distribute among 12 *heavily greased* muffin tins. [If you don’t grease the muffin tins well they will be a nightmare to remove…]

2. Preheat oven to 400.

3. Add bacon, cheese, and other add-ins to the bread in the muffin cups.

4. Whisk together eggs, milk, ground mustard, salt, and pepper. Evenly pour over the 12 muffin cups. Do not overfill!

5. Bake for 15 minutes. Eggs will swell up but will deflate once they are out of the oven! Cool for about 15 minutes before removing. Store in fridge for 2-3 days or freezer for 5 months+!
